Glazed Chicken Skewers 

Ingredients: 

  1. 4-6 chicken thighs, cut into 1-inch pieces

  2. 3 tablespoons Pineapple, Red Onion, and Habanero Marmalade

  3. 2 tablespoons soy sauce

  4. 1 tablespoon honey

  5. 1 clove garlic, minced

  6. Wooden skewers, soaked in water for 30 minutes

  7. Fresh pineapple chunks (optional)

Instructions:

  1. In a bowl, mix the marmalade, soy sauce, honey, and garlic to create the glaze.

  2. Thread chicken pieces (and pineapple chunks if using) onto the skewers.

  3. Brush the skewers with half of the glaze.

  4. Grill or broil the skewers until the chicken is cooked through, brushing occasionally with the remaining glaze for extra flavor.

  5. Serve warm as an appetizer or part of a barbecue spread.
