1 sheet of puff pastry, thawed
3 tablespoons Pineapple, Red Onion, and Habanero Marmalade
1 cup fresh pineapple, thinly sliced
1 teaspoon brown sugar
1 egg, beaten (for egg wash)
Vanilla ice cream or whipped cream for serving
Instructions:
Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a baking sheet lined with parchment paper.
Spread the marmalade over the pastry, leaving a small border around the edges.
Arrange the pineapple slices on top of the marmalade and sprinkle with brown sugar.
Fold the edges of the pastry over the filling slightly to create a crust.
Brush the pastry edges with the egg wash.
Bake for 20-25 minutes or until the pastry is golden and puffed.
Let it cool slightly before slicing. Serve with a scoop of vanilla ice cream or a dollop of whipped cream to balance the heat of the habanero.
